Gelato is an Italian dessert known for its creamy texture and rich flavors. It’s crafted using a higher proportion of milk to cream. This results in a lower fat content than traditional ice cream. Additionally, gelato incorporates fewer egg yolks (or none at all) and uses natural flavorings like fresh fruits, nuts, or coffee to create its taste.

Traditional ice cream usually has a richer taste and creamier texture. It also contains a higher percentage of cream, giving it a higher fat content than gelato. Typically, most ice cream recipes also call for milk, cream, sugar, egg yolks, and natural or artificial flavorings.

Texture and Churning Process

Gelato is churned at a slower speed than ice cream, which results in less air being incorporated during the freezing process. This slow churning process gives gelato its dense and smooth texture, creating a velvety delight to indulge in! 

In contrast, traditional ice cream is normally churned at a faster pace. This adds more air to the mixture, resulting in a lighter and fluffier texture. 

Serving Temperature

Gelato is served slightly warmer than ice cream, typically around 5 to 10 degrees Fahrenheit (-15 to -12 degrees Celsius). The higher milk-to-cream ratio allows gelato to stay softer at lower temperatures, enhancing its smooth and creamy consistency.

Traditional ice cream is best served at a colder temperature, usually around 10 to 15 degrees Fahrenheit (-12 to -9 degrees Celsius). The higher fat content in ice cream can make it harder at these temperatures, but the added air during churning helps maintain a scoopable texture.
